Ingredients

Instructions

  1. Preheat oven to 350 F (175 C) and line a baking sheet with parchment paper.
  2. Combine all ingredients EXCEPT the water into a large mixing bowl: 10 Tablespoons peanut butter powder, 2 Tablespoons unsalted butter, 1/2 cup granulated sugar substitute, 1 large egg, 1 teaspoon pure vanilla extract.
  3. Beat ingredients with a hand mixer on low speed until the dough begins to come together. Add one tablespoon of water and mix again. Only add the second tablespoon if the dough still appears too dry and needs to be loosened to form a cohesive ball.
  4. Spray your hands with cooking spray. Roll the dough into 10 equal balls.
  5. Using a fork dipped in water or sprayed with cooking spray, flatten each cookie ball slightly in a crisscross pattern on the prepared baking sheet.
  6. Bake for 11-13 minutes. The cookies will puff up a little during baking and should be lightly golden at the edges.
