Key Ingredients for Your Perfect Ravioli Lasagna

Crafting the perfect Cheesy Ravioli Lasagna starts with selecting quality ingredients. This recipe is designed to be flexible, allowing for substitutions to suit your taste and pantry. Here’s a closer look at what you’ll need and how each component contributes to this amazing dish.

Fresh ingredients laid out for making Ravioli Lasagna, including ravioli, marinara, cheese, spinach, and sausage.

The Pasta: Refrigerated Ravioli is Your Secret Weapon

The star of this dish is undoubtedly the refrigerated cheese ravioli. Using pre-made ravioli is what makes this lasagna so incredibly easy, eliminating the need to boil individual lasagna noodles. We recommend refrigerated ravioli for its superior texture and quick cooking time, but feel free to experiment!

  • Variations: While cheese ravioli offers a classic flavor, you can easily switch to meat ravioli for a heartier dish, or a spinach/kale ravioli for an extra boost of greens. Mushroom or ricotta and spinach ravioli are also excellent choices for different flavor profiles.
  • Fresh vs. Frozen: If using frozen ravioli, you might need to increase the baking time slightly to ensure the ravioli is cooked through and tender. There’s no need to thaw frozen ravioli beforehand; simply add them directly to your casserole.

Savory Sauce: The Heart of Your Lasagna

A rich and flavorful sauce is essential for any great lasagna. For convenience and consistent results, we start with a simple jarred marinara sauce. Look for a high-quality brand that you enjoy for the best flavor.

  • Enhancements: To add depth and texture, we incorporate a can of undrained diced tomatoes. The liquid from the diced tomatoes helps keep the lasagna moist and flavorful during baking.
  • Homemade Options: If you prefer to make your own, a homemade marinara sauce would be absolutely delicious here. You could also try our robust Bolognese Sauce for an even richer, meatier base.
  • Aromatics: Minced garlic and Italian seasoning are added to the sauce mixture, infusing it with aromatic Italian flavors that perfectly complement the other ingredients.

Protein Power: Choosing Your Sausage

For a lighter yet still incredibly flavorful protein, this recipe calls for Italian chicken sausage. It brings a savory, spiced element to the dish without being overly heavy.

  • Substitutions: If chicken sausage isn’t your preference, feel free to substitute a pound of ground beef, ground turkey, or traditional Italian pork sausage. Brown and crumble any ground meat before mixing it into the dish. For a vegetarian option, consider plant-based sausage alternatives or simply increase the amount of greens and cheese.

Wholesome Greens: Spinach or Kale

To balance the richness of the pasta, sausage, and cheese, we incorporate fresh baby spinach or baby kale. These greens wilt down beautifully during baking, adding a subtle earthiness and a nutritional boost.

  • Preparation: Ensure the greens are coarsely chopped so they distribute well throughout the layers. You can use either spinach or kale, depending on your preference. If using mature kale, you might want to blanch it briefly to soften it before mixing.

Abundance of Cheese: The Melty Goodness

What’s lasagna without plenty of cheese? We use a generous amount of shredded mozzarella cheese, which melts into gooey, delicious layers, holding everything together.

  • Layering: The mozzarella is divided, with a portion mixed into the sausage and greens, and the rest topping the lasagna for that irresistible golden-brown crust.
  • Extra Flavor: While not explicitly listed as a main ingredient, a sprinkle of grated Parmesan cheese over the top before serving can add an extra layer of salty, umami flavor.

  1. Prepare Your Baking Dish: Begin by preheating your oven to 375 degrees F (190°C). Lightly grease a standard 9×13 inch (3-quart) baking dish with non-stick cooking spray or a thin layer of olive oil. This will prevent the lasagna from sticking and ensure easy serving.
  2. Mix the Filling and Sauce: In a large mixing bowl, combine the coarsely chopped baby kale (or spinach), cooked and chopped Italian chicken sausage, 3/4 cup of the shredded mozzarella cheese, and the fresh chopped basil. Toss gently until all ingredients are well distributed. In a separate large bowl, prepare your sauce by mixing together the marinara sauce, undrained diced tomatoes, minced garlic, and Italian seasoning. Stir until thoroughly combined.
Two bowls: one with marinara, diced tomatoes, garlic, and Italian seasoning for the sauce, and another with chopped kale, cooked sausage, cheese, and basil for the filling.
  3. Start Layering Your Lasagna: Spread approximately 1 cup of the prepared marinara sauce mixture evenly over the bottom of your greased baking dish. This forms the flavorful base. Carefully arrange half of the uncooked ravioli in a single layer over the sauce. Next, spoon half of the kale and sausage mixture evenly over the ravioli layer.
First layer of ravioli placed over marinara sauce in a baking dish.
Layer of chicken sausage and kale mixture spread over ravioli in a casserole dish.
  4. Continue Layering: Drizzle another cup of marinara sauce over the kale and sausage layer. Then, arrange the remaining half of the ravioli on top. Follow with the rest of the kale and sausage mixture. Finally, spread the remaining sauce over the top layer.
  5. Add the Final Cheese Topping: Generously sprinkle the remaining 3/4 cup of mozzarella cheese over the entire top surface of the lasagna. This will create a wonderfully golden and bubbly crust.
Shredded mozzarella cheese generously sprinkled on top of spinach and sauce in a dish, ready for baking.
  6. Bake to Perfection: Lightly spray one side of a piece of aluminum foil with non-stick cooking spray. Cover the baking dish tightly with the foil, sprayed-side down (this prevents cheese from sticking). Bake in the preheated oven for 30 minutes. After 30 minutes, carefully remove the foil and continue baking for an additional 15 minutes, or until the lasagna is heated through, the sauce is bubbly, and the cheese topping is golden brown and melted.
  7. Serve and Enjoy: Once baked, remove the lasagna from the oven. If desired, garnish with a sprinkle of fresh basil before serving. Allow it to rest for 5-10 minutes before slicing and serving. This resting time helps the layers set, making it easier to cut and ensuring it holds its shape beautifully.

Expert Tips for the Best Ravioli Lasagna

Achieving a perfect Cheesy Ravioli Lasagna is simple, but a few expert tips can make your dish even better:

  • Don’t Overcrowd the Dish: Ensure your 9×13 inch dish isn’t overflowing. If you find you have too much filling, use a slightly larger dish or hold back a small amount of sauce/filling for another use.
  • Ravioli Choice Matters: While refrigerated ravioli is recommended, if using fresh pasta from a deli, ensure it’s not pre-cooked. If it is, adjust baking time as needed to avoid mushy pasta.
  • Customize Your Greens: Beyond spinach and kale, you can also add other finely chopped vegetables like zucchini or bell peppers for extra nutrition and flavor. Sauté them briefly before adding to the mixture to remove excess moisture.
  • Boost the Flavor: For an extra layer of flavor, consider adding a sprinkle of red pepper flakes to your marinara sauce for a subtle kick, or a pinch of sugar to balance the acidity of the tomatoes.
  • Resting Time is Key: Don’t skip the resting period after baking. It allows the cheese and sauce to set, preventing the lasagna from falling apart when you cut into it. This ensures neat, beautiful slices every time.
  • Cover During Storage: When storing leftovers, always cover the dish tightly with plastic wrap or aluminum foil to maintain moisture and freshness.

Frequently Asked Questions (FAQs) About Ravioli Lasagna

Can I freeze ravioli lasagna?

Absolutely! Ravioli lasagna freezes exceptionally well, making it a fantastic make-ahead meal. To freeze, let the baked lasagna cool completely. Then, either cover the entire baking dish tightly with several layers of plastic wrap and aluminum foil, or divide it into individual portions and store them in airtight, freezer-safe containers. It will keep beautifully in the freezer for up to 3 months. To reheat, thaw overnight in the refrigerator, then bake at 350°F (175°C) until heated through and bubbly, covering with foil if the top starts to brown too much.

Can I make ravioli lasagna ahead of time?

Yes, this recipe is perfect for meal prepping! You can assemble the entire lasagna up to 3-4 days in advance and store it covered in the refrigerator. When you’re ready to bake, simply follow the baking instructions, adding an extra 10-15 minutes to the covered baking time to account for the colder starting temperature. Alternatively, you can assemble and freeze it for up to 3 months, as described above.

What can I substitute in this recipe?

This ravioli lasagna is very versatile, and many ingredients can be swapped to suit your taste or what you have on hand:

  • Sausage: Instead of Italian chicken sausage, you can use a different type of Italian sausage (mild or spicy pork), ground beef, or ground turkey. Ensure any ground meat is cooked and crumbled before mixing. For a vegetarian version, use a plant-based sausage alternative or add extra vegetables like sautéed mushrooms or zucchini.
  • Greens: Baby spinach can be substituted with baby kale, Swiss chard, or even a mixed greens blend. If you prefer, you can omit the greens entirely, though they add great flavor and nutrients.
  • Ravioli: While cheese ravioli is classic, any flavored or stuffed ravioli works beautifully. Consider mushroom, spinach, or even a sweet potato ravioli for a unique twist. Fresh or frozen ravioli can be used, adjusting baking time for frozen.
  • Herbs: If using dried basil instead of fresh, remember that dried herbs are more potent. Cut the measurement in half (e.g., use 1/4 cup dried basil instead of 1/2 cup fresh). You can also add other Italian herbs like oregano or parsley.
  • Cheese: While mozzarella is key for meltiness, feel free to add other cheeses like ricotta (mixed into the sausage and greens layer), provolone, or a blend of Italian cheeses for additional flavor complexity.

Its ability to be made ahead and frozen makes it an incredibly convenient and versatile option for any meal.

The recipes on this blog are tested with a conventional gas oven and gas stovetop. It’s important to note that some ovens, especially as they age, can cook and bake inconsistently. Using an inexpensive oven thermometer can assure you that your oven is truly heating to the proper temperature. If you use a toaster oven or countertop oven, please keep in mind that they may not distribute heat the same as a conventional full sized oven and you may need to adjust your cooking/baking times. In the case of recipes made with a pressure cooker, air fryer, slow cooker, or other appliance, a link to the appliances we use is listed within each respective recipe. For baking recipes where measurements are given by weight, please note that results may not be the same if cups are used instead, and we can’t guarantee success with that method.
