- 3 (7 ounce) packages of ladyfingers
- 2 cups chilled espresso
Whipped Cream and Cocoa Toppings
- 2 cups whipping cream
- 2 tablespoons confectioner’s sugar
- ⅛ teaspoon cream of tartar
- 2-4 tablespoons cocoa for dusting (sweetened or unsweetened)
Instructions
- Brew espresso ahead of time (at least an hour) and place in the refrigerator to chill thoroughly.
- Prepare the first batch of whipped cream (for the tiramisu cream) by combining 1-3/4 cups heavy whipping cream and 1/8 teaspoon cream of tartar. Whip until firm peaks form, then set aside, covered, in the refrigerator.
- For the whipped cream topping, you can choose to make it now or just before serving. Whip the remaining 2 cups whipping cream with 2 tablespoons of confectioner’s sugar until stiff peaks form. If preparing now, cover and chill.
- Using a double boiler, bring water to a gentle boil, then reduce heat to low. In the top bowl, combine 1 cup sifted granulated sugar, the 6 egg yolks, and 1 teaspoon vanilla extract. Continuously stir this mixture for about 10 minutes, ensuring it becomes smooth and slightly thickened. Do not let it curdle. Remove from heat.
- Using your hand mixer, whip the egg yolk and sugar mixture until it becomes a pale yellow color and is very smooth and airy.

Place these two soaked ladyfingers at the bottom of each of your 6 mason jars. Add another layer of two espresso-soaked ladyfingers on top of the first layer in each jar.
- Retrieve the tiramisu cream from the refrigerator. Using a 1/2 cup measure, scoop the cream and distribute it evenly over the espresso-soaked ladyfingers in all 6 jars. There’s no need to press it down forcefully, but gently smoothing the top is fine as it will settle during chilling.
- Add a final layer of espresso-soaked ladyfingers to each jar. Use four ladyfingers per jar for this layer, arranged as two pairs.
- Evenly distribute any remaining tiramisu cream among the jars, creating the top cream layer before the final topping.
- If you are transporting the dessert, cover the jars tightly at this point and store them in the refrigerator. Just before serving, top them with the whipped cream (from step 3) and a generous dusting of cocoa powder.
