It was a stroke of serendipity that led me to create this vibrant Key West Grilled Chicken Salad, a recipe bursting with the irresistible flavors of Florida. As an ardent admirer of chicken, especially when it features prominently in fresh, crisp salads, my culinary senses were instantly piqued when I stumbled upon a marinade simply titled ‘Key West Grilled Chicken.’ I knew, right then, that a delightful culinary adventure was about to unfold.

Embrace the Sunshine: Key West Grilled Chicken Salad
This salad is more than just a meal; it’s an experience. Each forkful delivers a perfect symphony of sweet and savory notes, a delightful contrast of juicy, tender grilled chicken, and satisfying crunch from fresh greens and nuts. It’s a truly ideal grilled chicken salad that I find myself craving and preparing time and again. For an added layer of texture and flavor, I highly recommend topping it with some crispy homemade croutons, elevating this already exceptional dish.

A Long-Awaited Journey to the Sunshine State
For as long as I can remember, visiting Florida, particularly the enchanting Florida Keys, had been a deeply cherished dream. Back in high school, it seemed everyone else escaped to Florida for spring break, while I, due to my parents’ divorce and the financial constraints of the time, could only dream. I watched as my classmates returned, sun-kissed and relaxed, and with each passing year, I silently vowed that one day, I would check Florida off my bucket list and immerse myself in its unique charm.

That dream finally materialized, unexpectedly, years later. You may recall my previous post about the Food Blog Forum, a wonderful food blogging conference I had the privilege of attending in March. Thanks to the incredible generosity of Disney World and various other sponsors, I was finally able to embark on my first-ever trip to Florida. It was a moment of profound joy and gratitude, a long-held aspiration finally coming to fruition.

The Warmth of Friendship and Southern Hospitality
Beyond the conference, there was another reason my Florida trip became truly unforgettable: my dear friend, Jodi. With open arms and a truly generous spirit, she welcomed my entire family – all seven of us! – into her home. After the bustling conference in Orlando, we piled into our rental van and drove a scenic 3.5 hours to Jodi’s place, where we spent two more wonderful nights. Meeting Jodi in person for the first time was an emotional highlight. We had been collaborating online for over four years, working for the same company, and had forged a deep and lasting friendship. Her kindness and warmth left an indelible mark on all of us.

As you can probably imagine, with five children, our crew quickly made themselves at home, playfully taking over Jodi’s living room. Her unwavering hospitality was a true blessing, giving us invaluable extra time to explore more of Florida before our journey back to Wisconsin. It was a testament to the power of friendship and the magic of finally connecting in person.

Upon our arrival, Jodi and her husband, Mike, immediately set about feeding our rather large party. And believe me, catering to seven hungry travelers is no small feat, but they did so with such grace and generosity.

The rest of that first evening melted away as we relaxed in their backyard, marveling at the tranquil canal that flowed behind their home, and simply reveling in the joy of good company and newfound in-person connection.

Even a friendly lizard decided to stop by for a visit, adding a touch of authentic Florida wildlife to our relaxed evening. It was these small, unexpected moments that truly defined the magic of our stay.

Oh, and did I mention Jodi’s fascinating Muscovy Ducks? Their tale is truly amazing and holds a special place in her heart, so much so that her blog is aptly named My Muscovy Ducks Tale. Her blog beautifully recounts how she defied conventional wisdom after being told by the humane society that abandoned eggs wouldn’t survive without their mother and should be discarded. Jodi proved them wonderfully wrong, nurturing those eggs to life and sharing a truly heartwarming story with happy endings. It’s a testament to her compassion and determination, and a unique part of her life that I greatly admire.

Discovering the Untouched Beauty of Key Largo
Thanks to Jodi’s incredible hospitality and the strategic location of her home, we were perfectly positioned for a visit to Key Largo, just a little over an hour’s drive away. Without her generosity, our Florida adventure would have concluded in Orlando, and we would have missed out on experiencing more of the breathtaking natural beauty that the southern part of the state has to offer.

Our first unforgettable stop in Key Largo was a ride on a glass-bottomed boat. Though the video I captured was a bit noisy from the wind and a little shaky from the gentle bumps of the water, it perfectly encapsulated what a truly beautiful day it was. Peering through the boat’s glass bottom, we witnessed a vibrant underwater world – schools of colorful fish darting amongst intricate coral reefs. It was an absolutely fabulous experience, and simply being out on the vast, beautiful ocean was nothing short of outstanding.

We had initially planned to go snorkeling, but the winds proved to be quite strong that day, whipping around and making conditions less than ideal. Instead, we decided to take a scenic drive, exploring what treasures we might discover. Unfortunately, our time was limited, preventing us from driving all the way down the legendary Florida Keys. That epic journey, we decided, would have to be saved for another time. However, our impromptu drive led us to a charming, secluded spot: a small parking lot, barely large enough for six cars, marked simply as “Annie’s Beach.”

If you’ve ever embarked on the drive down to Key Largo and further into The Keys, you’ll know that the landscape is uniquely defined by the ocean on both sides, with only a slender strip of land in between. Finding an empty parking space, especially in a gem like Annie’s Beach, feels like hitting the jackpot – it’s a moment you seize without hesitation!

At Annie’s Beach, a beautiful wooden bridge path stretched seemingly endlessly, inviting us to wander and explore the untouched natural beauty around us. It was a pathway to tranquility, a place where the sounds of the waves and the gentle rustle of leaves were the only companions.

Along this picturesque path, discreet entrances led us directly to the water’s edge, each revealing a new vista of the stunning Floridian coastline.

And what lay beyond these entrances was nothing short of spectacular – breathtaking views of crystal-clear turquoise waters and pristine, natural beauty. It was a sight that captured my heart, making me wish I could stay forever.

As much as I wanted to linger in that sun-drenched paradise, I knew all good things must come to an end, and eventually, the familiar skyline of Chicago would appear outside my window. Goodbye, beautiful Florida, until we meet again! Especially now that I know I have a wonderful friend and a place to crash. 😉

Bringing the Keys Home: The Inspiration Behind the Salad
Even when I’m far from Florida’s shores, I can always drift back to its tropical embrace by creating this exquisite grilled chicken salad. It’s a vibrant medley filled with sweet mandarin oranges, crunchy cashews, a medley of chewy dried tropical fruits, and succulent, perfectly marinated chicken. The secret to its incredible flavor lies in the marinated chicken, which I adapted from this fantastic recipe – Key West Grilled Chicken on Grocery Budget 101. While their original recipe is excellent, I found that my chicken truly benefited from a slightly longer marination time. A helpful tip for maximizing flavor absorption is to gently poke the chicken breasts a few times with a fork before they soak up all that wonderful marinade. This simple step ensures every bite is infused with Key West magic.

For the dressing, I discovered a truly delightful option at my local market that perfectly complements the tropical notes of this salad. I’m generally not one for heavy dressings, so just a few light drizzles are all I add to enhance, rather than overpower, the fresh flavors. A light citrus vinaigrette or a homemade honey-lime dressing would also be fantastic choices, adding a bright tang that harmonizes beautifully with the sweetness of the fruit and the savory chicken.

So, if you’re yearning for a taste of paradise and a little mental escape to the sun-drenched Keys, I invite you to join me on this culinary journey. The detailed recipe for this irresistible grilled chicken salad is provided below. Let’s create, share, and dream of ocean breezes and vibrant tropical flavors together.

While my heart longed to stay in Florida, I must admit that our serene little lake town in southeast Wisconsin also offers some truly spectacular sunsets. So, I will continue to cherish the beauty that surrounds me each day, patiently awaiting my next opportunity to visit the mesmerizing ocean. Until then, this Key West Grilled Chicken Salad serves as my delicious connection to those cherished memories.

The recipes on this blog are tested with a conventional gas oven and gas stovetop. It’s important to note that some ovens, especially as they age, can cook and bake inconsistently. Using an inexpensive oven thermometer can assure you that your oven is truly heating to the proper temperature. If you use a toaster oven or countertop oven, please keep in mind that they may not distribute heat the same as a conventional full sized oven and you may need to adjust your cooking/baking times. In the case of recipes made with a pressure cooker, air fryer, slow cooker, or other appliance, a link to the appliances we use is listed within each respective recipe. For baking recipes where measurements are given by weight, please note that results may not be the same if cups are used instead, and we can’t guarantee success with that method.
