Easy to make yet incredibly impressive, this poke cake is destined to become your go-to recipe for national holidays and summer festivities.

Why This Patriotic Poke Cake is a Must-Try
This Red, White, and Blue Poke Cake recipe is more than just a dessert; it’s a celebration in itself. Its vibrant colors and delightful flavor make it an absolute showstopper, ideal for any festive occasion. Whether you’re planning a Memorial Day picnic, a grand Fourth of July BBQ, or a heartfelt Veterans Day gathering, this cake brings a touch of patriotic joy to the table. The beauty of a poke cake lies in its simplicity combined with an impressive outcome, ensuring you spend less time baking and more time celebrating.
What makes poke cakes so universally loved is their clever use of everyday ingredients to create something truly special. A humble boxed cake mix transforms into a moist, flavorful base, while gelatin infuses it with captivating colors and an extra burst of taste. Topped with a luscious whipped topping and fresh fruit, it’s a dessert that feels homemade and gourmet without the fuss. We’ve explored the magic of poke cakes before with favorites like our Watermelon Poke Cupcakes, the creamy Banana Pudding Poke Cake, and the decadent Boston Cream Poke Cake. This patriotic version continues the tradition of easy, delightful desserts that consistently impress.
Beyond its stunning appearance, this cake offers a refreshing texture and a medley of flavors. The cool, jiggly Jell-O seeping into the tender cake creates pockets of fruity goodness, while the light whipped topping and fresh berries provide a perfect contrast. It’s a dessert that appeals to all ages, simple enough for beginners yet elegant enough for seasoned bakers to appreciate. Plus, it’s a fantastic recipe to involve the whole family, from poking holes in the cake to arranging the colorful berries.

Essential Ingredients for Your Patriotic Poke Cake
Crafting this festive dessert requires a handful of accessible ingredients that come together to create a harmonious blend of flavors and textures. For precise measurements and step-by-step instructions, please refer to the detailed recipe card provided at the end of this guide. Gathering your ingredients beforehand will ensure a smooth and enjoyable baking experience.

Choosing Your Jell-O Flavors
For the iconic red and blue hues, we recommend using cherry and berry blue Jell-O flavors. These provide vivid colors and classic fruity tastes that complement the white cake beautifully. However, you have creative freedom here! Strawberry or raspberry gelatin (much like our popular raspberry poke cake) would work wonderfully for the red component. When preparing, remember that you will be using UNPREPARED Jell-O powder mixed with water. The specific quantities of boiling and ice water needed are precisely outlined in the recipe card, so you don’t need to follow the box instructions. A crucial tip: you truly only need about 1.5 ounces of prepared liquid Jell-O per flavor to infuse the cake effectively. Adding too much can result in the liquid pooling at the bottom, making the cake overly wet. Don’t worry about leftover Jell-O; it’s perfect for making individual Jell-O cups or other fun, festive treats!
Selecting the Perfect Cake Base
A white cake mix is the foundation of this patriotic dessert. Its light color serves as the ideal canvas, allowing the vibrant red and blue Jell-O to truly pop and create a striking contrast. For a cake that is truly “red, WHITE, and blue,” we strongly advise using only egg whites when mixing your cake batter. Traditional egg yolks can impart a yellowish tint to the cake, which might diminish the crispness of your white layer. Most boxed white cake mixes will specify if egg whites only are recommended or provide instructions for achieving a whiter cake. Following these simple guidelines ensures your cake base is as visually appealing as it is delicious.
Topping and Decoration Essentials
For the creamy white topping, Cool Whip is our preferred choice due to its convenience, light texture, and excellent stability. It holds up beautifully, even when refrigerated for extended periods, making it ideal for make-ahead desserts. If you prefer a more gourmet touch, feel free to use your favorite homemade whipped cream recipe. To achieve the stunning flag design, we turn to fresh strawberries and blueberries. Their natural colors perfectly mimic the American flag. When selecting your berries, look for ripe, firm strawberries and plump, dark blueberries to ensure the best flavor and appearance. While strawberries and blueberries are traditional, you could also incorporate blackberries or raspberries for additional flavor and visual interest, though they might alter the classic flag aesthetic slightly.
Step-by-Step Guide: Crafting Your Red, White, and Blue Poke Cake
These step-by-step photos and detailed instructions are designed to help you visualize each stage of making this spectacular cake. For a complete printable version of this recipe, including all measurements and instructions, scroll down to the recipe card at the bottom of this post.
- Prepare Your Cake: Begin by preheating your oven to 350°F (175°C), or precisely as directed on your specific cake mix package. In a large mixing bowl, combine the white cake mix with eggs, oil, and water, adhering strictly to the quantities and instructions provided on the cake mix box. This ensures your cake bakes perfectly.
- Bake to Perfection: Gently pour the prepared cake batter into a greased 9×13 glass baking dish. Bake for approximately 30 minutes, or until a wooden skewer inserted into the center comes out clean. Avoid overbaking, as this can lead to a dry cake, which we want to avoid for optimal Jell-O absorption.
- Cooling the Cake: Once baked, remove the cake from the oven and allow it to cool in the baking dish for 5-10 minutes. This partial cooling period is crucial before introducing the Jell-O. During this time, you can begin preparing your gelatin mixtures.
- Prepare the Jell-O: For each color of Jell-O (red and blue), dissolve 3 ounces of Jell-O powder in 1 cup of boiling water. Stir continuously until the gelatin crystals are completely dissolved, ensuring a smooth, lump-free mixture. Then, add 1 cup of ice water to each mixture and stir until well combined. The ice water helps to cool the gelatin quickly and prepare it for pouring over the cake.

The essential step of mixing boiling and ice water with the Jell-O powder to create vibrant liquid colors. - Poke the Holes: Once the cake has slightly cooled, use the handle of a wooden spoon, a chopstick, or even a large fork to poke holes all over the cake’s surface. Aim for a consistent pattern, about 1 inch apart, ensuring the holes go almost all the way to the bottom but without piercing through. These holes are the magical channels that will allow the Jell-O to seep in and create those beautiful, colorful pockets.

Creating the signature “poke” in the cake is crucial for the Jell-O infusion. - Infuse with Jell-O: Carefully alternate rows of the blue and red liquid Jell-O, drizzling it heavily over the poked holes. Watch as the vibrant colors seep into the cake, creating a stunning visual effect. You will likely not need to use all of the prepared Jell-O; use just enough to fill the holes and create distinct stripes. The goal is to infuse the cake, not to drown it.

Pouring the vibrant Jell-O into the cake’s poked holes, creating colorful stripes. - Apply Whipped Topping: Once the cake has cooled completely to room temperature (this is essential for the topping to set properly), gently spread the thawed Cool Whip evenly over the entire surface of the cake. Use an offset spatula for a smooth, professional finish.

Smoothly spreading the Cool Whip to create a pristine white canvas for decoration. - Decorate Your Flag Cake: Now for the artistic part! Neatly place the blueberries into one top-left corner of the cake, forming the “star” field of the flag. Next, slice your strawberries into uniform ⅛-inch thick slices. Arrange these strawberry slices in horizontal rows across the remainder of the cake (excluding the blueberry corner), slightly overlapping each slice to create elegant “stripes.”

The beautifully completed American flag poke cake, ready to chill. - Chill and Serve: Refrigerate the decorated cake for at least 2 hours. This chilling time allows the Jell-O to fully set within the cake and ensures the flavors meld beautifully. When ready to serve, slice the cake into 20-24 pieces, revealing the stunning red and blue interior. Enjoy your masterpiece!
Frequently Asked Questions & Expert Tips
Can I prepare Red, White, and Blue Poke Cake in advance?
Absolutely! This patriotic poke cake is an excellent make-ahead dessert. You can prepare it up to 1 day in advance of your event. Making it the day before allows ample time for the Jell-O to fully set and the flavors to deepen, resulting in an even more delicious and visually appealing cake on the day of your celebration. Just ensure it’s properly covered and refrigerated.
What is the best way to store this poke cake?
To maintain its freshness and appearance, tightly cover the poke cake with plastic wrap or aluminum foil and store it in the refrigerator. It will remain delicious for up to 3 days. Be aware that fresh strawberries on top may start to release some liquid after a couple of days, which is natural. For best presentation, if making significantly ahead, you might consider adding the fresh berries closer to serving time.
Can I use homemade whipped topping and a homemade cake?
Yes, definitely! Customization is encouraged. If you prefer to bake from scratch, we have a wonderful classic white cake recipe that would be a perfect substitute for the boxed mix. For the topping, you can easily whip up heavy whipping cream with a touch of powdered sugar and vanilla extract until stiff peaks form, creating a luxurious homemade whipped cream. For extra stability in homemade whipped cream, especially for make-ahead purposes, you can add a small amount of gelatin or cream of tartar during whipping.
How can I ensure my Jell-O stripes are vibrant and distinct?
For the most vibrant and distinct Jell-O stripes, ensure your cake has cooled enough before pouring the Jell-O, but not completely cold as some warmth helps absorption. Use a spoon or a squeeze bottle to carefully drizzle the Jell-O into the holes, avoiding large spills between rows. Also, make sure your Jell-O is fully dissolved and cooled slightly after adding ice water so it doesn’t cook the cake further. If you find the Jell-O is pooling too much, you might be adding slightly more than the cake can absorb; adjust the quantity to about 1.5 ounces per flavor, focusing on filling the holes.
What if I don’t have a wooden spoon handle or chopstick for poking?
No worries! Any cylindrical object of similar diameter can work. A clean, blunt pencil, the back of a large piping tip, or even a thick skewer can create the perfect holes. The key is to make holes that are deep enough to absorb the Jell-O but not so wide that they compromise the cake’s structure or allow the Jell-O to spread too broadly.
Tips for perfectly sliced strawberries for decoration:
To achieve uniform and neat strawberry stripes, first, wash and pat dry your strawberries thoroughly. Slice off the green stem and then slice the berries into consistent ⅛-inch to ¼-inch thick pieces. For the most uniform shapes to create crisp stripes, try to use only the center slices of larger strawberries. Discard the very ends or use them for snacking! Selecting strawberries that are similar in size will also help in creating evenly sized stripes across your flag design.

Elevate Your Serving Experience
This Red, White, and Blue Poke Cake is a versatile dessert that shines in many settings. It’s a perfect centerpiece for potlucks, backyard BBQs, and all types of summer parties. Its vibrant colors naturally make it a festive addition to any spread. To complete your patriotic feast, consider pairing this delightful cake with a selection of easy yet delicious main courses and side dishes. Imagine it alongside succulent grilled shrimp, sweet and smoky grilled corn on the cob, or flavorful marinated grilled chicken skewers. For a lighter touch, a crisp garden salad or a refreshing fruit salad would complement the richness of the cake beautifully. Consider serving it with a scoop of vanilla bean ice cream for an extra indulgent experience, or a side of fresh berry compote to amplify the fruit flavors.

- 8 oz Cool Whip or whipped topping
- 10 strawberries (sliced)
- 1 cup blueberries
Things You’ll Need
- 13×9 baking dish
Before You Begin
- For a truly red, WHITE, and blue cake, be sure to use egg whites only when mixing up the cake mix. Egg yolks will make the cake mix more yellow.
- You really only need about 1.5 oz. of each flavor of Jell-O liquid to infuse the cake properly. If you add too much, it starts to puddle on the bottom of the cake. Use any leftover Jell-O to make Jell-O cups or other festive treats.
- When slicing the strawberries, first cut off the stem and then slice into even slices, about ⅛”-¼” thick. For the most uniform stripes, use the center slices for decoration and choose strawberries that are similar in size.
Instructions
- Preheat oven to 350°F (175°C) or as directed on cake mix package instructions.
- Beat together cake mix, eggs, oil, and water following the instructions and quantities indicated on cake mix package.
- Pour cake batter into a greased 9×13 glass baking dish and bake according to instructions (approximately 30 minutes).
- Allow the cake to cool for 5-10 minutes while you prepare the Jell-O.
- For each of the colors of Jell-O – mix 3 oz. with 1 cup of boiling water and stir until dissolved. Then add 1 cup ice water and stir until combined.
- Use the handle of a wooden spoon or a chopstick to poke holes all over the cake.
- Alternate rows of blue and red Jell-O liquid, drizzling it heavily over the holes in the cake; you will not need to use all of the Jell-O.
- Once the cake has cooled completely, gently top with the thawed Cool Whip.
- Place blueberries neatly into one top left corner of the cake. Slice strawberries into ⅛” slices and place them in rows across the whole cake (except for the blueberry corner), overlapping each slice slightly.
- Refrigerate for 2 hours before serving. Slice into 20-24 pieces and serve.

The recipes on this blog are tested with a conventional gas oven and gas stovetop. It’s important to note that some ovens, especially as they age, can cook and bake inconsistently. Using an inexpensive oven thermometer can assure you that your oven is truly heating to the proper temperature. If you use a toaster oven or countertop oven, please keep in mind that they may not distribute heat the same as a conventional full sized oven and you may need to adjust your cooking/baking times. In the case of recipes made with a pressure cooker, air fryer, slow cooker, or other appliance, a link to the appliances we use is listed within each respective recipe. For baking recipes where measurements are given by weight, please note that results may not be the same if cups are used instead, and we can’t guarantee success with that method.
