Effortless Entertaining: The Ultimate Herbed Breakfast Stuffing Casserole
Hosting can be a joyous experience, especially during the holidays when loved ones gather. However, the morning meal for a crowd often presents a unique challenge. Imagine juggling multiple pans of sizzling bacon, fluffy eggs, and crisp sausage, all while trying to keep everything warm and perfectly timed. This is where the magic of a breakfast casserole shines, transforming what could be a stressful culinary marathon into a smooth, delightful start to your day. This Herbed Breakfast Stuffing Casserole is not just a dish; it’s a solution – a delicious, hearty, and incredibly convenient way to feed everyone without the fuss.
With its savory blend of herbs, robust meats, creamy eggs, and cheesy goodness, this casserole promises a memorable breakfast that requires minimal effort on the morning of your event. Whether you’re planning for Christmas morning, a family brunch, or simply a weekend gathering, this recipe is designed to impress your guests and free you up to enjoy their company.

The Inspiration: A Delicious Collaboration with a Wisconsin Twist
The journey to create this magnificent breakfast casserole began with an exciting partnership. Pepperidge Farm, renowned for its quality and flavor, challenged me to develop a unique recipe featuring one of their delicious stuffings. As a long-time fan, especially of their Herb Seasoned Stuffing, which is a staple at our Thanksgiving table, I eagerly accepted. I knew their stuffing’s perfect texture and rich herb blend would provide an incredible foundation. However, I wanted to push the boundaries beyond a traditional holiday side dish and infuse it with a special touch.
The additional request was to incorporate a “Wisconsin twist.” For those unfamiliar, Wisconsin proudly bears the moniker “The Dairy State.” Our heritage is deeply rooted in dairy farming, and this reputation for exceptional cheese and milk flows through everything we create. Naturally, my mind immediately gravitated towards incorporating these elements into a hearty breakfast. The thought of combining the comforting flavors of stuffing with the rich, creamy essence of Wisconsin’s dairy scene sparked the idea of a comprehensive breakfast casserole – a dish that embodies both convenience and the indulgent spirit of our state’s culinary identity.

Why a Breakfast Casserole is Your Holiday Hero
Imagine the scene: It’s Christmas morning. Family is stirring, coffee is brewing, and everyone is ready for a festive breakfast. If you’ve ever attempted to cook a full farmhouse-style breakfast buffet for a crowd – complete with frothy scrambled eggs, crisp bacon, and sizzling sausage – you know the overwhelming amount of work involved. Keeping everything warm simultaneously while cooking other components is a feat in itself. Toast often ends up soggy, and different dishes are rarely at the same temperature. It’s a labor of love that can quickly turn into kitchen chaos.
This is precisely where the breakfast casserole enters as your culinary savior. It’s the ultimate solution for serving a piping hot, satisfying breakfast to many without the constant hassle of managing individual platters. A well-constructed casserole ensures all the delicious elements are cooked together, melding their flavors into a harmonious whole, and served at a consistent, enjoyable temperature. It simplifies your morning, allowing you to spend less time at the stove and more time creating cherished memories with your loved ones.

Make-Ahead Magic: Streamlining Your Morning
One of the most significant advantages of this Herbed Breakfast Stuffing Casserole is its incredible make-ahead potential. The key to a stress-free morning lies in intelligent preparation. By tackling several steps the day before, you can drastically cut down on morning prep time and simply pop the casserole into the oven when you’re ready. This strategy is a game-changer for holiday entertaining or busy weekends.
Here are the crucial components you can prepare in advance:
- Cook and crumble the bacon: Crispy bacon is a must, and cooking it the day before means less grease to deal with in the morning and one less pan to worry about.
- Cook and slice the sausage: Whether you opt for breakfast links or patties, cooking and slicing them ahead ensures they are perfectly integrated into the casserole.
- Shred the cheese: Pre-shredded cheese saves precious minutes, and having it ready means less mess when assembling.
- Measure out the stuffing: Portioning the Pepperidge Farm Herb Seasoned Stuffing beforehand streamlines the layering process.
- Dice the shallots: Chopping your aromatics the night before reduces morning knife work.
By completing these simple steps, you’ll find that assembling the casserole in the morning is a breeze, leaving you with just a few quick actions before it’s ready for the oven. This forward-thinking approach transforms frantic mornings into relaxed ones, allowing you to enjoy the aromas of a delicious breakfast baking without any last-minute scramble. Serve this hearty casserole alongside some warm, buttered bread or perfectly toasted slices for a truly complete and satisfying meal.

Assembling Your Herbed Breakfast Stuffing Casserole
Creating this casserole is straightforward, especially if you’ve done your prep work. The layering of ingredients is key to achieving that perfect balance of textures and flavors in every bite. Follow these simple steps for a truly magnificent breakfast:
- **Prepare the Base:** Begin by lightly browning the corned beef hash in a skillet, then spreading it evenly across the bottom of your prepared baking pan. This creates a savory, hearty foundation.
- **Build the Flavor Layers:** Combine the main portion of the Herb Seasoned Stuffing with your cooked bacon, sliced sausage, and sautéed shallots. This mix forms the core of your casserole, infusing it with incredible aroma and taste. Spread this over the corned beef hash.
- **Add the Cheese:** Sprinkle a generous layer of shredded Gouda cheese over the stuffing and meat mixture. This adds a delightful creaminess and that distinct Wisconsin touch.
- **Pour the Custard:** Whisk together the eggs and milk, seasoned with fresh black pepper, and pour this creamy mixture over all the layers, ensuring it seeps into every nook and cranny. Gently press down any ingredients that float to the top to ensure they are immersed in the egg custard.
- **The Topping:** Finish with the reserved portion of Herb Seasoned Stuffing sprinkled over the top, which will bake into a wonderfully crisp, golden crust.

Once assembled, your casserole is ready for the oven. The magic truly happens as it bakes, transforming into a golden-brown, bubbling masterpiece that will fill your kitchen with irresistible aromas. This dish is not just about feeding people; it’s about creating a warm, inviting atmosphere and serving a meal that feels both special and effortless.

Customize Your Casserole: Variations for Every Palate
One of the best aspects of a breakfast casserole is its adaptability. This recipe is a fantastic starting point, but don’t hesitate to personalize it to suit your family’s preferences or whatever ingredients you have on hand. Here are some ideas to spark your culinary creativity:
1. Meat Variations
While breakfast sausage and bacon are classic choices, you can easily swap them for other savory options. The goal is to have about 1½ cups of cooked meat in total. Consider:
- Ham: Diced cooked ham adds a different kind of saltiness and texture.
- Polish Sausage: Sliced and browned Polish sausage offers a smoky, garlicky flavor.
- Chorizo: For a spicy kick, use cooked and crumbled chorizo sausage.
- Vegetarian Options: For a meat-free version, consider sautéed mushrooms, plant-based sausage crumbles, or extra vegetables to maintain heartiness.
2. Cheese Choices
I adore Gouda for its mild, nutty flavor and excellent melt, but the world of cheese is your oyster! Feel free to experiment with:
- Cheddar: A sharp cheddar will add a robust, tangy flavor.
- Swiss: Offers a slightly sweet and nutty profile that pairs well with eggs and meat.
- Monterey Jack: For a milder, extra-melty option.
- Pepper Jack: If you prefer a subtle hint of spice.
- Feta: Crumbled feta could introduce a salty, tangy Mediterranean flair.
3. Alternative Base Layers
If corned beef hash isn’t your preference, several delicious alternatives can form the base of your casserole:
- Frozen O’Brien Potatoes: Thaw a scant 2 cups and pan-fry them lightly to warm them and develop some crispy edges before spreading them in the baking pan.
- Shredded Hash Browns: Similarly, lightly fry shredded hash browns until golden for a classic breakfast potato base.
- Sautéed Vegetables: A layer of sautéed onions, bell peppers, and spinach could make a lighter, veggie-focused base.
4. Egg Substitutes
If you prefer to use an egg substitute, such as Egg Beaters, this recipe adapts beautifully. Since the eggs are whisked and scrambled within the casserole, egg substitutes perform just as well as whole eggs, offering a lighter option without compromising texture.
5. Adding More Vegetables & Aromatics
To enhance flavor and nutrition, consider these additions:
- Onions: If shallots are unavailable, a mild or sweet onion like Vidalia can be used. You’ll only need about 2-3 tablespoons when diced.
- Bell Peppers: Diced bell peppers (any color) add a lovely sweetness and vibrant color.
- Mushrooms: Sliced and sautéed mushrooms bring an earthy umami depth that’s incredibly delicious.
- Spinach or Kale: Wilted greens can be stirred into the stuffing mixture for added vitamins and color.

Instructions
-
Spray a 13×9 baking pan with non-stick cooking spray and preheat the oven to 350°F (175°C).
-
After cooking the bacon, drain the grease but do not clean the skillet. Empty the can of corned beef hash into the skillet and cook for a few minutes to warm it up and brown it lightly. Empty the warmed corned beef hash into the 13×9 pan and spread it evenly as the base.
-
In that same skillet, add a teaspoon of olive oil and sauté the diced shallots over medium heat, just until softened and lightly browned.
-
Whisk together the eggs and the milk in a bowl and season generously with freshly ground pepper.
-
Reserve ½ cup of the Herb Seasoned Stuffing. To the remaining 1½ cups of stuffing, add the crumbled bacon, sliced sausage links, and the sautéed shallots. Stir gently to combine, then spread this mixture evenly over the top of the corned beef hash in the baking pan.
-
Sprinkle the shredded Gouda cheese over the stuffing and meat layer. Then, carefully pour the whisked egg mixture over everything, ensuring it covers all ingredients. Use a spoon to gently press down any ingredients that are poking up out of the egg mixture, ensuring they are moistened. Finally, sprinkle the reserved ½ cup of stuffing over the very top of the casserole.
-
Bake for 45-50 minutes, or until the casserole is golden brown, set in the center, and bubbling around the edges. A knife inserted into the center should come out clean. Let it rest for a few minutes before serving.

The recipes on this blog are tested with a conventional gas oven and gas stovetop. It’s important to note that some ovens, especially as they age, can cook and bake inconsistently. Using an inexpensive oven thermometer can assure you that your oven is truly heating to the proper temperature. If you use a toaster oven or countertop oven, please keep in mind that they may not distribute heat the same as a conventional full-sized oven and you may need to adjust your cooking/baking times. In the case of recipes made with a pressure cooker, air fryer, slow cooker, or other appliance, a link to the appliances we use is listed within each respective recipe. For baking recipes where measurements are given by weight, please note that results may not be the same if cups are used instead, and we can’t guarantee success with that method.
Serving Suggestions and Storage Tips
Once your Herbed Breakfast Stuffing Casserole emerges from the oven, golden and fragrant, let it rest for a few minutes before slicing. This allows the ingredients to set, ensuring clean cuts and an easier serve. While it’s incredibly satisfying on its own, a few accompaniments can elevate the experience:
- Fresh Fruit Salad: A vibrant mix of berries, melon, and citrus provides a refreshing contrast to the rich casserole.
- Warm Bread or Biscuits: Extra toast or warm, flaky biscuits with butter and jam are always a welcome addition.
- Spicy Kick: Offer hot sauce on the side for those who enjoy a little heat.
- Green Salad: For a brunch setting, a light green salad with a vinaigrette can balance the meal.
Storing Leftovers
This casserole makes excellent leftovers! Allow any remaining portions to cool completely before transferring them to an airtight container. Store in the refrigerator for up to 3-4 days. To reheat, you can microwave individual servings or warm larger portions in an oven preheated to 300°F (150°C) until heated through, about 15-20 minutes, covering loosely with foil to prevent drying.
Freezing for Future Feasts
For even greater convenience, this casserole can be frozen. Once completely cooled, wrap individual slices or the entire casserole (if using a freezer-safe pan) tightly in plastic wrap, then in aluminum foil. It can be frozen for up to 2-3 months. Thaw overnight in the refrigerator before reheating. When reheating from frozen, it might take a bit longer to heat through in the oven.
