This particular recipe takes that enduring appeal and elevates it, ensuring your homemade cherry pie isn’t just good, but absolutely unforgettable.

The secret ingredient that transforms this recipe from great to exceptional is a touch of bourbon. Far from overpowering the delicate fruit, the bourbon introduces a nuanced, slightly nutty warmth and a depth of flavor that binds everything together. It acts as a culinary conductor, enhancing the natural sweetness of the cherries and amplifying the aromatic notes of vanilla and almond extract. Every bite delivers a harmonious symphony, allowing each flavor to shine to its fullest potential without any single ingredient dominating. This thoughtful addition creates a sophisticated twist on a beloved classic, making it a truly gourmet experience.

Forget the shortcuts of store-bought cherry pie filling – today, we’re embracing the vibrant freshness of sweet, ripe cherries. Using fresh fruit not only guarantees a superior flavor and texture but also offers the satisfaction of creating something truly from scratch. Ingredient Spotlight & Smart Substitutions

Understanding your ingredients and knowing when and how to make substitutions can greatly enhance your baking success. Here’s a closer look at the components of this delicious cherry pie:

PIE CRUST: The Foundation of Flavor
The crust is arguably as important as the filling itself. While we’ve opted for readily available premade pie crusts in this recipe for convenience and to minimize prep time, don’t hesitate to use your favorite homemade pie crust recipe if you have one. Making your own crust from scratch allows for custom flavors and textures, and can be a truly rewarding endeavor. If you’re new to pie making, store-bought crusts are a fantastic way to simplify the process without compromising too much on quality. For an extra touch, consider a butter-based crust for richness or a shortening-based crust for flakiness.

CHERRIES: The Star of the Show
Our preferred choice is dark sweet cherries, known for their deep color and luscious sweetness. However, if you prefer a pie with a little more tartness, Rainier cherries make an excellent substitute, offering a beautiful yellow-red hue and a brighter flavor profile. Don’t worry if fresh cherries aren’t in season or readily available; frozen cherries work just as wonderfully! There’s no need to thaw them beforehand; simply add them directly to your filling mixture. Ensure they are pitted, whether fresh or frozen, to save yourself a surprise later.

FLAVOR ENHANCERS & THICKENERS: The Supporting Cast
The addition of bourbon is key to this recipe’s unique character. It contributes a subtle, warm, and nutty complexity that complements the cherries beautifully. If you prefer to exclude alcohol, you have excellent alternatives. A bourbon extract can mimic the flavor without the alcohol content. Alternatively, replacing the bourbon with cranberry juice or a cranberry-cherry juice blend will add a lovely fruity depth and a slight tang, ensuring the pie’s flavor profile remains rich and well-balanced. The cornstarch in this recipe is crucial for achieving the perfect consistency in your cherry filling. It thickens the juices released by the cherries during baking, preventing a watery, runny pie. Without it, your pie might overflow and become difficult to slice. Similarly, adding small pieces of butter throughout the filling contributes to a richer texture and helps further prevent the filling from becoming too liquidy or bubbling out excessively over the edges, creating a beautifully set and glossy interior.

SWEETENER: We specify raw turbinado sugar for its subtle caramel notes and coarser texture, which adds a lovely crunch to the crust. Granulated sugar can be used as a direct substitute if turbinado is not available.

CITRUS: Lemon juice brightens the cherry flavor, balancing the sweetness and preventing the pie from tasting flat. It’s a small but mighty addition.

EXTRACTS: Vanilla and almond extracts deepen the flavor profile, adding aromatic warmth that harmonizes with the cherries and bourbon. Don’t skip these for a truly gourmet taste.

Crafting Your Perfect Bourbon Cherry Pie: Step-by-Step Guide

These detailed step-by-step photos and instructions are provided to guide you visually through the process of making this exquisite cherry pie. For a quick overview, complete with all measurements and printable instructions, you can simply scroll down to the full recipe card at the bottom of this page.

  1. Prepare the Pie Crusts: Begin by removing your refrigerated pie crusts from the fridge. Allow them to thaw at room temperature for approximately 15-20 minutes. This crucial step makes the dough more pliable and easier to work with, preventing cracks when you unroll them into your pie dish.
  2. Preheat Your Oven: While the crusts are thawing, preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). A properly preheated oven ensures even baking from the very beginning.
  3. Cherry Preparation: If you’re using fresh cherries, you’ll need to carefully pit them and remove their stems. This can be done efficiently with a cherry pitter. If you opt for frozen cherries, there’s no need to thaw them; they can be used directly from the freezer.
  4. Combine Cherries and Sugar: Place your prepared cherries into a large mixing bowl. Add the bourbon (or your chosen substitute) and ½ cup of the raw turbinado sugar. Gently toss the cherries to ensure they are evenly coated. Reserve the remaining sugar for later use on the crust.
  5. Infuse Flavors: Next, add the cornstarch, fresh lemon juice, vanilla extract, and almond extract to the bowl with the cherries. Mix thoroughly with a spoon until all the cherries are fully coated in the glistening, aromatic mixture. This ensures every cherry is bursting with flavor.

  6. First Crust Placement: Carefully unroll one of your thawed pie crusts and fit it snugly into a 9-9.5 inch pie dish. Gently press it into the bottom and up the sides, making sure there are no air bubbles underneath.

  7. Add the Filling: Pour the luscious cherry filling directly into the prepared pie crust, spreading it evenly across the bottom.

  8. Dot with Butter: Cut the butter into small, even pieces and scatter them uniformly over the top of the cherry filling. These butter pieces will melt during baking, adding richness and helping to prevent the filling from becoming too runny.
  9. Prepare the Top Crust (Lattice Option): Unroll your second pie crust onto a piece of parchment paper. Using a pastry wheel, a pizza cutter, a decorative cookie cutter edge, or a sharp knife, cut the crust into approximately 8-10 even strips. These strips will form your decorative top crust.
  10. Create Your Lattice: Artfully lay the pastry strips over the cherry filling to create a beautiful lattice pattern. You can be as creative as you like! A common method is to lay five strips vertically, then weave three strips horizontally over and under the vertical ones. This classic pattern allows steam to escape and creates beautiful visual appeal.

  11. Seal the Edges: Once your lattice is complete, trim off any excess dough hanging over the edges of the pie dish. Then, carefully tuck the edges of the lattice and the bottom crust together, pinching them firmly to create a neat seal. If the dough seems dry and isn’t sticking well, a tiny sprinkle of water can help bond the edges.

  12. Prepare Egg Wash: Crack the egg into a small bowl and add about 1 tablespoon of room temperature water. Whisk vigorously until well combined. This is your egg wash.
  13. Apply Egg Wash and Sugar: Lightly brush the entire top surface of your pie crust with the egg wash. This will give your pie a beautiful golden sheen. Immediately sprinkle the remaining raw turbinado sugar evenly over the egg-washed crust. The sugar will caramelize slightly, adding a lovely sparkle and a delightful crunchy texture.

  14. Initial Bake: Carefully place the pie in your preheated 375-degree F (190-degree C) oven and bake for approximately 30-35 minutes. During this phase, the crust begins to set and brown, and the filling starts to heat through.
  15. Protect Edges (If Needed): Keep a close eye on your pie. If the edges of the crust start to brown too quickly or appear to be getting too dark, it’s time to protect them. You can use a pie crust shield or create a makeshift one by folding aluminum foil into a ring that covers just the edges of the pie, leaving the middle exposed. This prevents burning while allowing the center to continue cooking.
  16. Final Bake: Place the protected pie back into the oven. Reduce the oven temperature to 350 degrees Fahrenheit (175 degrees Celsius) and continue baking for another 30 to 40 minutes. This lower temperature ensures the filling cooks completely and thickens properly without over-browning the crust.

EXPERT TIP – Oven temperatures can vary significantly, especially with older models. For optimal results, use an oven thermometer to verify your oven’s true temperature. Your pie is perfectly baked when the crust is a uniform golden brown, the cherry filling is visibly bubbling thickly through the lattice, and the bottom crust is no longer translucent but cooked through and golden when lifted slightly.

  17. Cool Completely: Once your pie is finished baking, remove it from the oven and transfer it to a wire cooling rack. Allow it to cool for at least 3 hours. This cooling period is absolutely essential as it allows the filling to set completely, preventing a runny mess when you slice into your masterpiece. Patience is key for the perfect slice!

Frequently Asked Questions & Expert Tips for Cherry Pie Success

What kind of cherries are best for cherry pie, and can I use frozen ones?

For this bourbon cherry pie, dark sweet cherries are our top recommendation due to their rich flavor and natural sweetness, which pairs wonderfully with the bourbon. However, if you prefer a pie with a more pronounced tartness, Rainier cherries are a fantastic alternative. They also offer a beautiful color. Absolutely, you can use frozen cherries! They are a convenient option, especially when fresh cherries are out of season. There’s no need to thaw frozen cherries before incorporating them into the filling; simply add them straight from the freezer. Just ensure they are pitted, as this will save you a lot of time and effort.

What’s the easiest way to pit cherries?

Pitting cherries by hand can be quite a laborious task, especially if you have a large batch. We highly recommend investing in a cherry pitter; it’s a small tool that makes the process incredibly fast and mess-free. If you don’t have a pitter on hand, a simple hack involves using a sturdy chopstick or a wooden skewer. Place the cherry on a cutting board, find the stem end, and push the chopstick through the cherry until the pit pops out the other side. Be prepared for a bit of juice!

How should I store cherry pie, and how long does it last?

To maintain optimal freshness and prevent it from drying out, store your homemade cherry pie loosely wrapped with aluminum foil or plastic wrap. It can be kept at room temperature (loosely covered) for up to 2 days. For longer storage, or in warmer climates, it’s best to refrigerate the pie. When refrigerated, it will stay fresh for up to 4 days. Always allow it to come to room temperature or gently rewarm it before serving for the best flavor and texture.

How can I prevent a soggy bottom crust?

A soggy bottom crust is a common pie pitfall. To avoid this, ensure your oven is adequately preheated, as a hot oven sets the crust quickly. You can also par-bake (blind bake) your bottom crust for 10-15 minutes before adding the filling. Additionally, the cornstarch in this recipe is key to thickening the filling, reducing excess moisture that could seep into the crust. A light egg wash on the bottom crust before filling can also create a barrier against moisture.

Can I make this cherry pie ahead of time or freeze it?

Yes, this cherry pie is excellent for making ahead! You can prepare the pie completely (unbaked) and freeze it. Wrap it tightly in several layers of plastic wrap and then foil, and freeze for up to 3 months. When ready to bake, place the frozen pie directly into a preheated oven (no need to thaw), adding about 20-30 minutes to the baking time, and keeping an eye on the crust to prevent over-browning. Baked pie can also be frozen for up to 2 months, wrapped securely. Thaw in the refrigerator overnight and reheat gently in a low oven before serving.

Perfect Pairings & Serving Suggestions

A slice of this delightful bourbon cherry pie is a treat on its own, but it truly shines when paired with a few simple accompaniments. For a classic experience, serve it warm with a generous dollop of freshly whipped cream or a heaping scoop of premium vanilla bean ice cream. The cool, creamy texture provides a wonderful contrast to the warm, fruity filling. For an extra touch of indulgence, consider drizzling it with a homemade caramel sauce or a sprinkle of toasted almond slivers to echo the almond extract in the filling.

While this pie is fantastic year-round, its vibrant flavors make it particularly popular during late spring and early summer when fresh cherries are abundant and at their peak. It also holds a special place at holiday tables, making a festive appearance at Thanksgiving alongside other seasonal favorites. Imagine serving this as a sophisticated alternative to traditional pumpkin pie! It pairs beautifully with a hot cup of coffee, a robust black tea, or even a glass of sparkling rosé for a truly celebratory feel. No matter the occasion or the season, this bourbon cherry pie is guaranteed to be a crowd-pleaser and a memorable dessert.

Course: Dessert
Cuisine: American
Servings: 8 slices
Total Time: 4 hours 30 mins
Calories: 356
Author: Amanda Davis

Ingredients

  • 2 refrigerated pie crusts
  • 4 cups dark sweet cherries (pitted, fresh or frozen)
  • 1 Tbsp bourbon (or cranberry juice)
  • ¾ cup raw sugar (turbinado sugar, divided)
  • 4 Tbsp cornstarch
  • 1 Tbsp lemon juice
  • 1 tsp vanilla extract
  • 1 tsp almond extract
  • 1 Tbsp butter
  • 1 egg

Things You’ll Need

  • 9 inch pie pan
  • Mixing bowls
  • Cherry pitter

Before You Begin

  • Ovens can vary, especially when cooking pies. When it’s ready, your crust should be a nice golden brown all over, you should see the cherry filling starting to bubble, and the bottom should not be translucent anymore, but cooked through.
  • Fresh or frozen cherries work well. You can also substitute Rainier Cherries for the dark sweet cherries if you prefer a tarter pie.
  • If you’d like to omit the alcohol, substitute the bourbon for cranberry juice. You can even use cranberry-cherry juice. This will still help balance and add complexity to the flavors of the pie.

Instructions

  1. Remove your pie crusts from the fridge and allow them to thaw for about 15-20 minutes before starting the pie.
  2. Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius).
  3. If you’re using fresh cherries, you’ll need to pit them and remove the stems. If you’re using frozen cherries, no need to thaw or do anything to them.
  4. Place the cherries in a bowl. Add the bourbon and ½ cup of the raw sugar (turbinado sugar) to the cherries. Save the rest of the sugar for later.
  5. Then add the cornstarch, lemon juice, vanilla extract, and almond extract to the cherries. Mix them around with a spoon until they’re fully coated.
  6. Place one of your pie crusts into a 9-9.5 inch pie dish.
  7. Add the cherry filling right into the crust.
  8. Cut your butter up into smaller pieces and place the pieces on top of the cherries evenly spaced out.
  9. Take your other pie crust and place it on a piece of parchment paper. Using a pastry wheel, cookie cutter edge, or knife, cut the second crust into about 8-10 even strips.
  10. Lay the strips on top of the cherries in any pattern you’d like. (e.g., five pieces down vertically and then three across the top horizontally).
  11. Next, trim off any excess dough around the edges and tuck the edges into the bottom crust, pinching them to it (you can use a sprinkle of water here if you are having trouble getting them to stick).
  12. Crack the egg into a bowl and add about 1 Tbsp of room temperature water to it. Mix it to make an egg wash.
  13. Brush the top of your pie crust with the egg wash. Sprinkle the crust with the remaining raw sugar.
  14. Place the pie in the oven and bake for about 30-35 minutes.
  15. If the edges are starting to get brown at this point, you may want to cover them with a baking protector or foil. Just fold the foil so it’s only covering the edges of the pie (It should lay right on the edges in a circle, leaving the middle exposed).
  16. Place the pie back in the oven, reduce the heat to 350 degrees Fahrenheit (175 degrees Celsius) and cook for another 30 to 40 minutes.
  17. Once the pie is done cooking, remove it from the oven and allow it to cool for about 3 hours on a wire rack.

The recipes on this blog are tested with a conventional gas oven and gas stovetop. It’s important to note that some ovens, especially as they age, can cook and bake inconsistently. Using an inexpensive oven thermometer can assure you that your oven is truly heating to the proper temperature. If you use a toaster oven or countertop oven, please keep in mind that they may not distribute heat the same as a conventional full sized oven and you may need to adjust your cooking/baking times. In the case of recipes made with a pressure cooker, air fryer, slow cooker, or other appliance, a link to the appliances we use is listed within each respective recipe. For baking recipes where measurements are given by weight, please note that results may not be the same if cups are used instead, and we can’t guarantee success with that method.
