Before You Begin

  • Generously grease an 8″ x 8″ pan with butter. Then, line the pan with two pieces of parchment paper, crossing them to create an overhang on all sides. Butter the parchment paper as well. This crucial step ensures that you can easily lift the set fudge out of the pan later. Set the prepared pan aside.
  • In a medium-large saucepan, combine 4 tablespoons of butter, 3 cups of mini marshmallows, 1 cup of sugar, ½ cup of heavy cream, and ½ teaspoon of kosher salt. Place the saucepan over medium heat. Stir gently but continuously until all the mini marshmallows have completely melted and the mixture is smooth. This process typically takes about 8-10 minutes. Ensure not to let the mixture boil vigorously.
  • Immediately remove the saucepan from the heat. Add 1 teaspoon of Baileys Original Irish Cream (or more, if you prefer a stronger flavor) and 12 ounces of semisweet chocolate chips. Stir vigorously until the chocolate is fully melted and completely incorporated into the marshmallow mixture, resulting in a smooth, glossy fudge. Pour the hot fudge into your prepared 8″ x 8″ pan. Gently shake the pan side-to-side to level out the fudge surface. After about 5 minutes, if desired, sprinkle your chosen optional holiday sprinkles evenly over the top. Allow the fudge to cool at room temperature for 25 minutes. Once slightly cooled, cover the pan and transfer it to the refrigerator to set completely for at least 1 hour.
