Instructions

  • Lightly grease a standard 12-cup muffin tray and set it aside. This is crucial for easy removal of your nests later.
  • Place the marshmallows in a large, microwave-safe bowl. Heat them in the microwave for 25-30 seconds. Remove and stir well with a spatula. If needed, repeat heating in 10-15 second intervals until the marshmallows are completely melted and smooth. Be careful not to overheat.
  • Add the melted coconut oil (or butter) and vanilla extract to the smooth marshmallow mixture. Stir vigorously until all ingredients are thoroughly combined and evenly distributed.
  • Gradually add the rice cereal, one cup at a time, gently folding it into the sticky marshmallow mixture. Continue folding until all of the cereal is fully incorporated and coated. Work quickly as the mixture will start to set as it cools.

  • Once the nests are firm, use a butter knife to gently loosen them from the muffin tray and pop them out. Fill each nest with your chosen treats.
