Why These Pizza Poppers Are a Must-Try

These pepperoni pizza poppers aren’t just easy; they’re a revelation in convenience and flavor. The secret to their effortless preparation lies in using store-bought canned biscuits. This clever shortcut completely bypasses the need for making pizza dough from scratch, saving you significant time and effort without compromising on taste or texture. While you certainly can use homemade pizza dough for a more traditional approach, the canned biscuit method is what makes this recipe unbelievably quick and accessible for anyone.

The process is incredibly straightforward: each biscuit dough is simply cut into six smaller sections, creating bite-sized pieces. These pieces are then tossed with a splash of olive oil, savory pepperoni, gooey cheese, and aromatic basil. Once combined, this delightful mixture is divided into a muffin tin and baked to golden perfection. The result? Little individual pizza muffins – soft, cheesy, and bursting with classic pizza flavor in every single bite. They puff up beautifully in the oven, creating a satisfying pull-apart texture that’s simply irresistible.

Beyond their undeniable ease, Pizza Poppers are incredibly versatile. They make a fantastic appetizer for game day parties, holiday gatherings, or any social event where finger foods are welcome. Their grab-and-go nature makes them perfect for kids and adults alike. But don’t limit them to just parties; they also hit the spot as a satisfying after-school snack, a quick and fun lunch, or even when that late-night pizza craving strikes. Serve them warm with a side of marinara sauce for dipping, and watch them disappear in minutes.

Ingredients for pizza bites laid out: biscuit dough, mini pepperonis, mozzarella cheese, and fresh basil.

Ingredient Insights and Customization Suggestions

The Biscuit Base: Your Foundation for Flavor

BISCUITS: We’ve found that Grands Southern Homestyle Biscuits work wonderfully for this recipe, providing a fluffy texture and rich flavor. However, don’t feel limited! Any brand or flavor of canned biscuits will do the trick. You can experiment with buttermilk biscuits for a tangier note, or even flaky layers for an extra textural dimension. Generic store-brand canned biscuits are a perfectly fine and budget-friendly option that will still yield delicious results. The key is their convenient, pre-made dough, ready to be transformed into pizza perfection.

Topping Transformations: Endless Possibilities

TOPPINGS: While mini pepperonis are a classic choice and what we’ve used here, the beauty of pizza poppers lies in their adaptability. Think of your muffin tin as a canvas for your culinary imagination! You can easily swap out or add any of your favorite pizza toppings. Consider savory additions like cooked and crumbled Italian sausage, crispy bacon bits, or diced ham. For a burst of freshness and texture, incorporate finely chopped bell peppers, onions, or black olives. If you like a little heat, diced jalapeños are an excellent choice. If mini pepperoni isn’t available, simply use 5 ounces of regular pepperoni and chop it into smaller, more manageable pieces so it distributes evenly throughout the biscuit dough.

Pro Tip for Veggies: For toppings like bell peppers and onions, we highly recommend giving them a quick sauté in a skillet before adding them to the mix. You don’t need to fully cook them; just soften them slightly. This step helps to release their flavors and ensures they are tender, not raw, after the relatively short baking time of the poppers. Similarly, any meat toppings like sausage or bacon should be fully cooked and drained of excess fat before being mixed in.

The Cheesy Heart: Melty Goodness

CHEESE: Mozzarella cheese is undeniably the star when it comes to pizza, delivering that iconic melt and stretch. For the best possible results, we always suggest grating cheese straight from the block yourself. Pre-bagged, pre-shredded cheeses often contain anti-caking agents that can hinder their melting capabilities. However, if you’re in a pinch, pre-shredded mozzarella will still work. Feel free to use your preferred cheese or even a blend! A mix of mozzarella with a touch of provolone, Parmesan, or even a sharper cheddar can add wonderful depth of flavor. Don’t be afraid to experiment with different cheese combinations to find your perfect cheesy bite.

Essential Enhancers: Oil & Herbs

OLIVE OIL: Extra virgin olive oil plays a crucial role not only in adding a lovely Mediterranean flavor but also in coating the biscuit pieces, helping them brown beautifully and preventing them from sticking together too much, while still allowing for that satisfying pull-apart quality.

FRESH BASIL: Fresh basil adds a vibrant, aromatic touch that brightens the entire dish. Finely chopped, it infuses the poppers with its distinct, sweet-peppery flavor. If fresh basil isn’t available, you can substitute with about 1-2 teaspoons of dried Italian seasoning or dried oregano, adjusting to taste. However, for that true fresh pizza parlor aroma, fresh basil is highly recommended.

How to Make Irresistible Pizza Poppers

These step-by-step photos and instructions are here to help you visualize how to make this recipe. You can find the full printable version of this recipe, complete with precise measurements and detailed instructions, in the recipe card at the bottom of this post.

  1. First, preheat your oven to 350°F (175°C). While the oven heats up, generously spray the wells of a 12-muffin tray with olive oil cooking spray. This crucial step prevents sticking and helps ensure your pizza poppers bake to a beautiful golden crisp.
  2. Carefully open your tube of canned biscuits. On a clean cutting board, cut each biscuit into 6 equal, bite-sized pieces. Aim for relatively consistent sizes so they cook evenly. Transfer all the chopped biscuit pieces to a large mixing bowl. Drizzle the 2 tablespoons of extra virgin olive oil over the biscuit pieces and toss gently until every piece is lightly coated.
  3. Next, add your chosen toppings to the bowl. For this recipe, that means the mini pepperonis, shredded mozzarella cheese, and the finely chopped fresh basil. Using your hands or a spatula, toss all the ingredients together thoroughly. Ensure that the pepperoni, cheese, and basil are evenly distributed among the biscuit pieces for a perfect flavor balance in every popper.

  4. Now, carefully divide the mixture equally between the 12 prepared muffin wells. Don’t worry if they look a little messy or don’t fill the wells completely at this stage; they will puff up significantly during baking. Gently press the mixture down slightly into each well.

  5. Place the muffin tray into the preheated oven and bake for approximately 15 to 20 minutes, or until the pizza poppers are beautifully puffed up and golden brown on top and around the edges. The cheese should be melted and bubbly. Once baked, remove the pan from the oven and let them cool for a couple of minutes in the pan. This brief cooling period helps them firm up slightly. Then, run a thin paring knife along the outside edge of each popper to loosen it, and carefully pop them out onto a serving platter.

  6. Serve your homemade pizza poppers warm, ideally with a delicious marinara or pizza sauce on the side for dipping. They’re at their absolute best when enjoyed fresh from the oven!

Frequently Asked Questions & Expert Tips for Pizza Poppers

Why are my pizza poppers oily?

It’s completely normal for pizza poppers to appear a bit oily during and immediately after the cooking process. Ingredients like pepperoni and cheese naturally release oils and fats as they heat up. Rest assured, they will absorb most of the oil as they cool slightly. If you’re concerned about excess grease dripping onto the bottom of your oven, a simple solution is to place a piece of foil on the oven rack directly beneath your muffin tray to catch any drips. For those who prefer a less oily finish, once they’re cooked, you can transfer the pizza poppers to a plate lined with paper towels to blot away any residual grease before serving.

Can I use other toppings?

Absolutely! This recipe is incredibly adaptable, inviting you to experiment with almost any pizza topping you desire. Beyond classic pepperoni, consider adding sliced black olives, finely chopped bell peppers (any color!), diced onions, cooked and crumbled sausage, crispy bacon pieces, or even diced ham. For an extra kick, a sprinkle of red pepper flakes or some diced jalapeños can really elevate the flavor. Feel free to mix and match to create your ultimate pizza popper combination!

Important Preparation Tip for Toppings: For best results, certain toppings require pre-cooking or pre-softening. If you plan to use sausage, bacon, or other meats, ensure they are fully cooked and excess grease is drained before adding them to the biscuit mixture. Similarly, harder vegetables like bell peppers and onions should be sautéed partially until slightly softened. This ensures that all ingredients are nicely cooked through and contribute to the overall texture and flavor of the pizza poppers within the short baking time.

How do I store and reheat leftover Pizza Poppers?

Leftover pizza poppers are fantastic! Allow them to cool completely before transferring them to an airtight container. Store them in the refrigerator for up to 3-4 days. To reheat, you can pop them back into a preheated oven (around 350°F/175°C) for 5-10 minutes, or until warmed through and crispy. An air fryer also works wonders for reheating, giving them a delightful crispness in just a few minutes. Microwaving is an option for quick reheating, but it may result in a softer texture.

Can I make Pizza Poppers ahead of time or freeze them?

Yes, with a few considerations! You can prep the biscuit and topping mixture a few hours in advance and keep it covered in the refrigerator. However, for best texture, it’s ideal to bake them fresh. For freezing, you have two options:

  • Freezing unbaked: Prepare the mixture, fill the muffin wells, and freeze the entire tray until solid. Once frozen, pop the unbaked poppers out of the tray and transfer them to a freezer-safe bag or container. When ready to bake, place them in a muffin tin and bake from frozen, adding an extra 5-10 minutes to the baking time.
  • Freezing baked: Bake the pizza poppers as directed, let them cool completely, then freeze them on a baking sheet until solid. Transfer to a freezer-safe bag or container. Reheat in the oven or air fryer until warmed through. They will keep well in the freezer for up to 1-2 months.

Serving Suggestions and Perfect Pairings

While marinara or pizza sauce is the quintessential dipping partner for pizza poppers, don’t hesitate to get creative with your serving options! Consider offering them up with a creamy ranch dressing, a rich garlic butter dip, or even a vibrant pesto for an extra layer of flavor. They’re delicious on their own, but a good dip elevates the experience.

These versatile bites are perfect for a multitude of occasions. Serve them warm from the oven as a crowd-pleasing appetizer at your next party, a fun and easy snack for movie night, or a quick, satisfying dinner when paired with a fresh green salad. Kids especially love them, making them a fantastic option for packed lunches or after-school munchies. Mix and match your favorite toppings, prepare them with love, and enjoy every savory, cheesy bite!

Servings: 12 pizza poppers
25 mins
Calories: 267
Author: Amanda Davis

Ingredients

  • olive oil spray for the muffin pan
  • 16 ounces Grands Southern Homestyle Biscuits 1 tube, or other canned biscuits
  • 2 Tablespoons extra virgin olive oil
  • 5 ounces mini pepperonis
  • 1 ¾ cup shredded mozzarella cheese
  • cup fresh basil finely chopped
  • 1 cup marinara or pizza sauce for dipping

Things You’ll Need

  • Muffin pan 12 cavity, regular size
  • Mixing bowls

Before You Begin

  • Feel free to experiment and use any type of Grands Biscuits that you like!
  • If you can’t find mini pepperoni, you can use 5 ounces of regular pepperoni. Just chop it so the pieces are smaller.
  • During the cooking process, these pizza poppers will start to look oily – that’s normal! They will absorb most of the oil by the time they’re done cooking. This wasn’t an issue for me, but if you’re concerned about grease dripping onto the bottom of your oven, you can place a piece of foil on the rack under the muffin tray to catch any drips as these cook. And if you want to remove the excess grease, after they’re cooked transfer them to a paper towel-lined plate.
  • You can toss in sliced black olives, chopped bell peppers, onion, sausage, bacon, diced ham, jalapenos, and just about any kind of pizza topping you like the most. If you plan on doing sausage pizza poppers, pre-cook the sausage in a skillet before tossing with the other ingredients – likewise with the bacon, bell peppers, and onions (at least cook until they are partially softened). That way, everything is nicely cooked through and nothing is raw.

Instructions

  1. Preheat the oven to 350F. Spray the wells of a 12-muffin tray with olive oil spray.
  2. Cut each biscuit into 6 equal pieces. Add the chopped biscuits and olive oil to a large bowl and toss to coat. Add the pepperoni, cheese, and basil, and toss to combine.
  3. Divide the mixture equally between the 12 muffin wells.
  4. Bake until the pizza poppers are puffed and golden, about 15 to 20 minutes. Let them cool for a couple of minutes in the pan, then run a paring knife along the outside and pop them out.
  5. Serve warm with marinara or pizza sauce for dipping.

The recipes on this blog are tested with a conventional gas oven and gas stovetop. It’s important to note that some ovens, especially as they age, can cook and bake inconsistently. Using an inexpensive oven thermometer can assure you that your oven is truly heating to the proper temperature. If you use a toaster oven or countertop oven, please keep in mind that they may not distribute heat the same as a conventional full sized oven and you may need to adjust your cooking/baking times. In the case of recipes made with a pressure cooker, air fryer, slow cooker, or other appliance, a link to the appliances we use is listed within each respective recipe. For baking recipes where measurements are given by weight, please note that results may not be the same if cups are used instead, and we can’t guarantee success with that method.
