  5. Add the remaining dried beans to the crockpot and sprinkle on any leftover seasonings.
  6. In a separate bowl, combine the water, soy sauce, and liquid smoke. Pour this liquid mixture over the beans and turkey tails in the crockpot. Ensure the liquid almost covers the turkey tails, about ¾ of the way up the meat; add a little more water if necessary.
  7. Cover the crockpot and cook on the LOW setting for 6 hours.
  8. Once cooking is complete, you may need to skim some liquid off the top, depending on your preferred sauce consistency.
