Ingredient Insights and Smart Substitutions

Understanding your ingredients and knowing when to substitute can elevate your cooking experience and make this slow cooker Mexican chicken recipe even more adaptable to your pantry and preferences.

CHICKEN: You have flexibility here! For convenience, a rotisserie chicken works wonderfully. Simply shred about 3 cups of cooked chicken. If you prefer using raw chicken, 2 pounds of boneless, skinless chicken breasts or thighs, diced, are perfect. When using raw chicken breasts, it’s a good idea to drain most of the excess liquid from the Rotel to prevent the dish from becoming too watery. However, if you opt for rotisserie chicken, including the liquid from the canned Rotel adds an extra layer of moisture and flavor to the already cooked chicken.

FILLING: The creamy base comes from 2 cans (totaling 21 oz) of cream of chicken soup. This provides a comforting and rich texture. For those who enjoy cooking from scratch or prefer to control ingredients, we have an excellent homemade cream of chicken soup recipe that would be a fantastic alternative. For the cheese, we recommend a blend of shredded jack cheese and medium cheddar. Freshly shredded cheese from a block typically melts smoother and has a better flavor than pre-shredded varieties, which often contain anti-caking agents. However, feel free to use your favorite Mexican cheese blend or any combination of cheeses you enjoy – Monterey Jack, Colby, or a spicy Pepper Jack would all be delicious additions.

BLACK BEANS: A staple in Mexican cuisine, black beans add heartiness and a good source of fiber. Make sure to drain and rinse canned black beans thoroughly before adding them to remove excess sodium and improve their texture. You could also use pinto beans or kidney beans if preferred.

ROTEL TOMATOES: These are a blend of diced tomatoes and green chilies, offering a unique tangy and mildly spicy flavor that is hard to replicate. If you can’t find Rotel, you can substitute a can of diced tomatoes and add a small can of diced green chilies for a similar effect. Adjust the amount of green chilies based on your preferred spice level.

CUMIN: This spice is non-negotiable for authentic Mexican flavor. It adds warmth and depth. Don’t skip it!

Mastering Your Crockpot: How to Make Mexican Chicken

These step-by-step instructions will guide you through creating this delightful Crockpot Mexican Chicken. For a full printable version with exact measurements and detailed instructions, scroll to the bottom of this post.

  1. Layer the Foundation: Begin by layering your diced chicken (raw or cooked) evenly at the bottom of your 5-6 quart slow cooker. Next, spread the drained and rinsed black beans over the chicken. This creates a solid base for the rest of your flavorful ingredients.

  2. Craft the Creamy Sauce: In a separate bowl, stir the ground cumin into the cream of chicken soup until thoroughly combined. This ensures the cumin is well distributed for maximum flavor. Gently spread this soup mixture over the chicken and beans layer, using a spatula to ensure it covers the entire surface evenly. Finally, add the canned Rotel tomatoes (drained if using raw chicken) over the soup layer.

  3. Slow Cook to Perfection: Cover your crockpot and cook the mixture on high for 4 hours. The slow cooking process will ensure the chicken becomes incredibly tender and absorbs all the wonderful flavors. If your slow cooker has a “low” setting, you could cook for 6-8 hours, but 4 hours on high typically yields perfect results.
  4. Add the Cheesy Finish: Once the cooking time is nearly complete, sprinkle both shredded jack cheese and medium cheddar cheese evenly over the tomato layer. Recover the crockpot and allow it to cook for an additional 15-20 minutes, or until the cheese is completely melted and bubbly, creating a luscious, golden topping.

  5. Garnish and Serve: Before serving, elevate the dish with fresh garnishes. Sprinkle generously with diced fresh tomatoes, sliced jalapeños (if you enjoy a kick), and fresh cilantro. These additions not only add vibrant color but also introduce fresh textures and flavors that complement the rich casserole.

  6. Enjoy! Serve your Crockpot Mexican Chicken hot and fresh. It’s fantastic on its own or with a side of your favorite chips, or even with crushed chips sprinkled directly on top for added crunch.

What else can I add to this recipe to customize it?

This recipe is wonderfully versatile! Some delicious additions include a can of diced green chiles for extra mild heat, chopped bell peppers (any color) for sweetness and crunch, a cup of frozen corn, or a sprinkle of taco seasoning for a bolder spice profile. You can also add a can of drained fire-roasted tomatoes for a smoky depth of flavor.

What if I don’t have cream of chicken soup?

If you prefer not to use canned soup, our homemade cream of chicken soup recipe is a fantastic substitute. Alternatively, you can create a creamy base using a roux (butter and flour) and chicken broth, thickened with a splash of milk or cream, seasoned with salt, pepper, and onion powder.

The recipes on this blog are tested with a conventional gas oven and gas stovetop. It’s important to note that some ovens, especially as they age, can cook and bake inconsistently. Using an inexpensive oven thermometer can assure you that your oven is truly heating to the proper temperature. If you use a toaster oven or countertop oven, please keep in mind that they may not distribute heat the same as a conventional full sized oven and you may need to adjust your cooking/baking times. In the case of recipes made with a pressure cooker, air fryer, slow cooker, or other appliance, a link to the appliances we use is listed within each respective recipe. For baking recipes where measurements are given by weight, please note that results may not be the same if cups are used instead, and we can’t guarantee success with that method.
