Ingredients

  • 1 carrot (or 24 orange candy-coated chocolate chips for beaks)

Instructions

For the Cupcakes:

  1. Preheat your oven to 350°F (175°C) and line a 24-cup muffin pan with your favorite cupcake liners.
  2. In a medium-sized bowl, thoroughly whisk together the cake flour, baking powder, baking soda, and salt. Set this dry mixture aside.
  3. In a separate, larger bowl, beat the two large eggs for about 30 seconds until slightly frothy. Gradually add the granulated sugar, continuing to beat until the mixture becomes light, pale, and fluffy, typically 2-3 minutes.
  4. Once the egg and sugar mixture is light and fully beaten, incorporate the pure vanilla extract and olive oil, mixing until just combined.

  6. Fill each muffin liner halfway full with the prepared cupcake batter.
  7. Bake for 12-15 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
  8. Allow the cupcakes to cool in the muffin pan for a few minutes before carefully transferring them to a wire cooling rack to cool completely. Ensure they are fully cooled before frosting.

For the Frosting and Decoration:

  1. In a large mixing bowl, combine the softened butter, 2 Tablespoons of heavy cream or milk, and vanilla extract.
  2. Gradually add the icing sugar, starting with 4-5 cups, and begin mixing on low speed until combined, then increase to medium-high speed. Beat for 2 minutes until light and fluffy. Adjust the consistency by adding more icing sugar for a thicker frosting or additional cream/milk (1 tablespoon at a time) for a thinner, more spreadable consistency. You’ll want a fairly firm frosting to hold the chick shape.
  3. Add a small amount of yellow gel food coloring to the buttercream and mix until you achieve a vibrant, uniform yellow color, resembling a baby chick.
  4. Spoon the yellow buttercream into a piping bag. For ease of decorating the chick body, snip off the tip of the piping bag to create an opening at least 1 inch wide. Alternatively, use a large round piping tip.
  5. For an extra touch of sparkle, lightly spread a thin layer of buttercream over the cooled cupcakes with an offset spatula. Gently roll the edges of the frosted cupcakes in edible glitter or sprinkles of your choice. This creates a shimmering base or adds a feathery texture.
