During my first attempt, while the flavor was phenomenal, the ice cream’s texture didn’t quite achieve the desired binding. I attributed this to the high water content of fresh orange juice. For my next batch, I plan to gently boil and reduce the freshly squeezed orange juice first, effectively creating a natural orange concentrate. This crucial step will not only enhance the creamy texture of the ice cream by reducing excess water but also intensify that fabulous, concentrated orange flavor we all crave in a citrus dessert. The recipes on this blog are tested with a conventional gas oven and gas stovetop. It’s important to note that some ovens, especially as they age, can cook and bake inconsistently. Using an inexpensive oven thermometer can assure you that your oven is truly heating to the proper temperature. If you use a toaster oven or countertop oven, please keep in mind that they may not distribute heat the same as a conventional full sized oven and you may need to adjust your cooking/baking times. In the case of recipes made with a pressure cooker, air fryer, slow cooker, or other appliance, a link to the appliances we use is listed within each respective recipe. For baking recipes where measurements are given by weight, please note that results may not be the same if cups are used instead, and we can’t guarantee success with that method.
Ingredients
- 14 oz can sweetened condensed milk
- 1 ½ cups fresh squeezed Sunkist Valencia orange juice (from about 4-5 medium oranges)
- 1 cup whole milk
- 1 cup heavy whipping cream
- 1 tablespoon vanilla extract
- 2 teaspoons orange extract
- 2 drops each of yellow and red food coloring (optional, for vibrant color)
Instructions
- Combine the sweetened condensed milk and the fresh orange juice in a heavy-bottomed saucepan. Cook this mixture over low heat for approximately ten minutes, stirring occasionally. This step helps to meld the flavors and slightly thicken the mixture. Remove the saucepan from the heat and allow the mixture to cool down slightly.
- In a separate bowl, whisk together the whole milk, heavy whipping cream, vanilla extract, orange extract, and the yellow and red food colorings (if using). Ensure all ingredients are well combined.
- Once the orange juice and condensed milk mixture has cooled, gently whisk it together with the milk and cream mixture. It’s important to combine them thoroughly but without over-whisking.
- Pour the combined ice cream base into a bowl, cover it tightly with plastic wrap, and refrigerate until it is thoroughly chilled. This chilling process is crucial for achieving the best texture in your final ice cream. Ideally, chill for at least 4 hours, or even overnight.
- Process the well-chilled mixture in your ice cream maker following the manufacturer’s specific instructions. The churning process will transform the liquid base into a soft-serve consistency.
- Once churned, transfer the soft ice cream mixture into a freezer-safe container with a tight-fitting lid. Freeze until solid, which typically takes at least 4 hours. For the best, scoopable texture, freezing overnight is highly recommended.
